Chicken, Turkey, Fowl and Egg: Chicken, Turkey, Fowl Dishes: Chicken with Orange Winter Squash and Zucchini

This low-carb dinner makes an easy week night meal.

Ingredients:

    14 oz orange winter squash, such as butternut
    1 large zucchini
    1 Tbsp butter
    2 slices Canadian bacon or strips of lean turkey bacon, chopped
    10 1/2 oz skinless, boneless chicken breasts, chopped
    2 tomatoes, chopped
    1 Tbsp chopped fresh lemongrass

Directions:

    Cut winter squash and zucchini into sticks. In separate containers/pans microwave or steam until just tender.

    Melt butter in a saucepan. Add bacon and chicken. Stir over medium heat until bacon and chicken is cooked. Add tomatoes. Cook for 2 minutes.

    Add lemongrass, zucchini and winter squash. Toss to combine, and serve immediately.

Variations:

    Serve with toasted herb bread, if desired.
