This low-carb dinner makes an easy week night meal.

1 large zucchini
1 Tbsp butter
2 slices Canadian bacon or strips of lean turkey bacon, chopped
10 1/2 oz skinless, boneless chicken breasts, chopped
2 tomatoes, chopped
1 Tbsp chopped fresh lemongrass
Melt butter in a saucepan. Add bacon and chicken. Stir over medium heat until bacon and chicken is cooked. Add tomatoes. Cook for 2 minutes.
Add lemongrass, zucchini and winter squash. Toss to combine, and serve immediately.
