For a crunchy salad, include this lighter version of the ever-popular apple-veggie salad.

Ingredients:

    3 large apples (red and green), cut into chunks
    1 orange, sectioned
    2 sticks celery (2 oz), thinly sliced
    1 oz walnuts
    1/4 tsp salt
    1/4 tsp black pepper
    2 Tbsp lemon juice
    2 Tbsp orange juice
    1/2 cup low-fat plain yogurt
    4 lettuce leaves
    12 thin red apple wedges, for garnish
    1 squirt of lemon juice

Directions:

    Combine apples, orange, celery, and walnuts. Season with salt and pepper. Mix together lemon juice, orange juice, yogurt, and add it to apple mixture.

    Line a salad bowl with lettuce leaves and mound the salad in the dish. Garnish with wedges of red skinned apple.

    Note: The apples should be sprinkled with lemon juice to prevent browning.

Variations:

    Can replace the yogurt, lemon juice and orange juice with the Avocado Dressing recipe (see recipe link).
