For a crunchy salad, include this lighter version of the ever-popular apple-veggie salad.

1 orange, sectioned
2 sticks celery (2 oz), thinly sliced
1 oz walnuts
1/4 tsp salt
1/4 tsp black pepper
2 Tbsp lemon juice
2 Tbsp orange juice
1/2 cup low-fat plain yogurt
4 lettuce leaves
12 thin red apple wedges, for garnish
1 squirt of lemon juice
Line a salad bowl with lettuce leaves and mound the salad in the dish. Garnish with wedges of red skinned apple.
Note: The apples should be sprinkled with lemon juice to prevent browning.
