8 small lamb chops, fat trimmed (about 17 oz. or four 4¼ oz. chops)
3 ripe nectarines, pitted and diced
1 navel orange, peeled and cut into pieces, save remaining juice
1 tsp grated fresh ginger
3 spring onions (green onions), sliced
1 pinch freshly ground black pepper

4 large lamb chops
1 Tbsp dried rosemary
1/4 cup oil

Directions:
Grill lamb chops for 4 minutes each side or until cooked.
To make salsa, combine nectarines, orange flesh, orange juice, and ginger in a serving bowl. Mix well. Stir in spring onion and freshly ground black pepper.
Serve immediately or refrigerate before use. Serve salsa over lamb.
