Extra Time: 6 hrs (or overnight, for standing and freezing)

Ingredients:

    1/2 cup raisins (unpacked), chopped
    1 1/2 Tbsp rum
    1 egg white
    1 (12 fl. oz) can low-fat evaporated milk, chilled
    1 1/2 tsp vanilla extract
    1/2 tsp liquid sugar substitute

Directions:

    Mix together raisins and rum, allow mixture to stand for 2 hours or overnight.

    To prepare ice cream, place milk, sugar substitute, egg white, and vanilla into a food processor, blender or mix-master. Process until thick and fluffy.

    Pour mixture into a freezer-proof bowl and freeze until beginning to set around the edge. Remove from freezer and beat until smooth. Stir in raisins and rum. Return to freezer until firm.
