Passion fruit and apricot give a touch of the exotic to this low-fat ice cream.
Suggestions: Passion fruit may be found in the exotic produce section of the grocery store, farmer's markets, or Asian markets.

5 fresh passion fruit
1/4 tsp liquid sugar substitute
1 (12 fl. oz) can 2% reduced-fat evaporated milk
1 egg white
1 1/2 tsp vanilla extract
1/2 tsp liquid sugar substitute, extra
ICE CREAM: Place milk, egg white, vanilla, and 1/2 teaspoon sugar substitute into a food processor or mixer and process until thick and fluffy.
Pour milk mixture into a freezer-proof bowl and freeze until beginning to set around the edge. Remove from freezer and beat until smooth. Stir through 2/3 of the passion fruit sauce and return to freezer until firm.
Use remaining passion fruit sauce over top of or with ice cream.
