1 tomato, sliced 1 tsp canola oil 1/4 tsp salt 1/4 cup Egg Beaters (or 2 tsp. powdered egg replacer) * 1/2 green bell pepper, seeded and diced Directions:
Prepare egg replacer according to directions on packet and pour over fried vegetables. Allow liquid egg to run underneath the sides of the omelet. When nearly set, place tomato slices on top and fold over omelet. Remove from pan and serve hot. Variations:
