Chicken, Turkey, Fowl and Egg: Chicken, Turkey, Fowl Dishes: Thai BBQ Chicken

    2 sticks lemongrass, chopped
    5 cloves garlic
    1 tsp ground turmeric
    1 bunch coriander roots
    1 1/2 tsp black peppercorns
    1 1/2 tsp brown sugar, unpacked
    1 cup nonfat plain yogurt
    4 skinless chicken breast filets


    In a food processor or blender, process until smooth: lemongrass, garlic, turmeric, coriander, pepper, sugar, with 2 tablespoons yogurt.
    Add the rest of the yogurt and process briefly until just combined.

    Pour over chicken in bowl, mix well, making sure chicken is well covered. Marinate for 2 hours. Cook until done on a barbecue or grill.


    Slice chicken and serve with fragrant jasmine rice. Or, serve with Fun Fries (see recipe links).
