1 good pinch saffron (about 20 strands) 15 Tbsp water (3/4 cup + 3 Tbsp) 4 medium pears 100 g low-fat ricotta cheese (100g) 5 Tbsp low-fat sour cream 2 tsp honey (for ricotta cream) 1/4 tsp ground cinnamon 1 tsp lemon zest Directions:
Peel, quarter and core pears. Cut each quarter in half. Add pears to syrup. Reduce heat. Simmer for 6 to 8 minutes or until tender. To make ricotta cream, place ricotta, sour cream, honey, cinnamon, and lemon zest in a food processor. Blend until smooth and creamy. Serve warm or cold poached pears with ricotta cream. Variations:
