Ingredients:
This made-over recipe lowers the calories and fat by replacing regular sour cream with fat-free, whole milk with low-fat, and butter with light buttery spread. The result - delicious mashed potatoes lighter on the waistline but not on flavor!

5 large Idaho® Russett Burbank potatoes, washed, peeled, and cut into chunks
2/3 cup fat-free sour cream
1/3 cup low-fat milk (1%)
57.14 g (1/4 cup) light buttery spread
2 Tbsp chopped fresh chives
1 tsp salt
1 tsp pepper

5 large russett potatoes, washed, peeled, and cut into large pieces
2/3 cup sour cream
1/3 cup whole milk (3.25%)
1/4 cup salted butter
2 Tbsp chopped chives
1 tsp salt
1 tsp pepper
1 Tbsp salted butter, extra, for topping

Directions:
Place potatoes in large pan and cover with water. Bring to a boil, covered, on high heat. Reduce to simmer. Simmer until potatoes are tender, about 25 to 30 minutes. Drain potatoes thoroughly; return to pan.
(Or, for crock-pot/slow cooker: Place potatoes in large crock-pot/slow cooker. Cover potatoes with water and cook over medium heat for 4 hours. Drain potatoes thoroughly.)
Mash the cooked potatoes. Mash in sour cream, milk and buttery spread. Add chives, salt and pepper. Mix until smooth. Serve.
Variations:
Can serve with your favorite gravy, such as CalorieKing's "Guilt-Free Turkey Gravy" (see recipe link).
For added fiber, can leave potato skins on.
Cheese mashed potatoes: add 1/4 to 1/2 cup low-fat shredded cheese.
Garlic mashed potatoes: add 2 tsp minced garlic, or to taste.
