Vegetarian: Pasta: Honey Carrot Pesto with Fettuccini

Pasta with a honey carrot sauce.

Ingredients:

    250.00 g uncooked fettuccini pasta
    1 Tbsp olive oil
    2 Tbsp pesto paste
    1 Tbsp chopped fresh basil
    1 pinch black pepper, or to taste
    1 can (9 oz) Honey Glazed Carrots
    1 Tbsp grated fresh Parmesan cheese

Directions:

    Cook pasta in large pot of boiling water, according to directions.

    Heat oil and pesto in pan, add drained pasta, basil and pepper, and toss for 2 minutes.

    Add Honey Glazed Carrots with about 2 tablespoons of liquid, fold through for 1 to 2 minutes. Serve with fresh parmesan.

Variations:

    Add sliced tomatoes and chopped parsley, if desired.
