Soup, Stew and Chili: Warm Soup, Stew and Chili: Sweet Corn and Zucchini Soup

1 onion, chopped
400 g zucchini, grated
1 can (14 oz) creamed corn
1 cup water
2 cup low-fat buttermilk
1 tsp cracked black pepper, or to taste
4 chives, snipped (for garnish)
In a large saucepan cook onion in a small amount of water until softened. Add zucchini, corn and water and bring to a boil. Cover and simmer for 15 minutes or until zucchini is tender.
Add buttermilk and reheat without boiling. Season with black pepper and garnish with chives.
