Chunky potato and tomato seasoned with garlic and herbs.

2 medium tomatoes, cut into chunks or thick slices
1 large onion (6 oz), sliced
1 tsp crushed garlic
1 Tbsp olive oil
1 Tbsp fresh herbs (oregano, rosemary or thyme)
1/2 tsp salt
1/2 tsp black pepper
Flavor potatoes, tomatoes and onion with garlic. Drizzle with a good coating of olive oil.
Add herbs, salt and pepper and mix through. Bake in preheated oven until the vegetables are cooked through and golden on top (approx 30 minutes). Stir occasionally to distribute the juices and flavors.
