A lovely moist cake that also makes a nice food gift!
Suggestions: As a food gift, wrap in cellophane or package and tie with a bow.

Preparation Time: 20 mins
1 1/2 cup hot tea
1 Tbsp oil
1/2 cup powdered sugar substitute
2 eggs, lightly beaten
1/2 cup nonfat milk
2 tsp vanilla
2 cup self-rising flour
1/4 tsp baking powder
Place dates, tea and oil in a saucepan and bring to a boil. Simmer for 3 to 4 minutes. Remove from heat and allow to cool.
In a mixing bowl, combine eggs, milk, sugar, and vanilla. Fold in sifted flour and baking powder. Pour in date mixture and mix until just combined.
Pour into prepared pan and bake in preheated oven for 35 to 40 minutes.
