Baking: Cakes, Cookies, Muffins: Rum Raisin Balls

Serve these sweet treats with coffee or other hot beverage, or wrap and give as a holiday gift!

    1 cup seedless raisins
    3 Tbsp rum
    1 cup almond meal
    1 cup flaked almonds
    1/2 tsp almond essence
    1/2 cup unsweetened cocoa
    1/2 cup Equal® Spoonful (or 12 packets Equal® sweetener)


    Soak raisins in rum overnight. Drain and place in a food processor with almond meal, flaked almonds, almond essence, and Equal®.

    Process until just combined. Shape mixture into balls and roll in cocoa.


    Alternatively, roll the balls in coconut.
