1 large can sauerkraut (30 oz), drained
3 stalks celery, sliced
1 medium onion, diced
1/2 bell pepper (your choice of color), diced
1/2 cup diced pimento
1/3 cup oil (such as canola oil)
1/4 cup white wine vinegar
3/4 cup Equal® Spoonful (or 18 packets Equal® Sweetener) *
1 dash each of salt & pepper, or to taste
Combine sauerkraut and vegetables in a large bowl. Whisk together oil, vinegar and Equal® in a small bowl. Toss vegetables and dressing to combine. Season with salt and pepper.
Refrigerate, covered, several hours or overnight to allow flavors to blend.
