Chicken, Turkey, Fowl and Egg: Chicken, Turkey, Fowl Dishes: Turkey, Mandarin and Poppy Seed Salad

Ingredients:

    1/4 cup orange juice
    1 1/2 Tbsp red wine vinegar
    1 1/2 tsp poppy seeds
    1 1/2 tsp olive oil
    1 tsp Dijon-style mustard
    1/8 tsp pepper
    5 cup red leaf lettuce, washed, dried, chilled and torn
    2 cup baby spinach leaves, washed, dried, chilled and torn
    0.23 kg cooked skinless turkey breast, cut into 1/2-inch julienne
    1 can (10 oz) mandarin oranges, juice pack, drained
    1 as needed, orange zest

Directions:

    DRESSING: In small bowl combine orange juice, vinegar, poppy seeds, oil, mustard, and black pepper. Set aside.

    SALAD: In large bowl toss together lettuce, spinach, turkey, and oranges. Pour dressing over turkey mixture.

    Garnish with orange zest and serve immediately.

Variations:

    If using mandarin oranges in syrup (versus juice pack), then adjust nutritional data.
