A tasty, lower-fat, higher-protein mayonnaise.
Suggestions: This recipe contains no eggs and very little oil. It can be used in place of regular mayonnaise.

1 Tbsp roughly chopped chives
2 Tbsp roughly chopped parsley
1/2 tsp mustard powder
1/4 tsp sugar
1 juice of 1 lemon
1/4 cup vegetable oil
1 Tbsp white wine vinegar
1 pinch of salt
1 pinch of black or white pepper
285.71 g firm tofu, crumbled
Add mustard, sugar, lemon juice, oil, vinegar, salt, pepper, and tofu. Blend until the mixture is smooth and creamy.
Refrigerate in a screw-top jar for several weeks if desired.
