Ingredients:

    4 cup watermelon (about 1 medium)
    1/2 - 1 small white onion, finely sliced, to taste
    1 Tbsp finely chopped fresh mint

Directions:

    Remove skin and seeds from watermelon. Cut into 1-inch cubes.

    Place watermelon and onion in a large bowl and toss lightly together. Chill well.

    Sprinkle with fresh mint before serving.
