2 jumbo eggs 1 cup salsa 1 dash of salt, or to taste 1/3 tsp hot sauce, or to taste Directions:
Heat iron skillet to medium or medium high and cook tortilla in heated skillet for 15 to 20 seconds on each side, adjusting the time depending upon heat of skillet. Put cooked tortilla on plate. Slide eggs and salsa on top of tortilla. At the table, add salt and hot sauce. Variations:
Homemade salsa and duck eggs would be an interesting change (serving suggestion not included in the nutritional analysis). (Per Serving)
