2/3 cup sliced carrots
1/2 cup diced onion
2 cloves garlic, minced
3 cup fat-free broth (beef, chicken or vegetable) *
1 1/2 cup chopped cabbage
1/2 cup fresh or frozen green beans
1 Tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini
Lightly spray saucepan with cooking spray. Over low heat, sauté carrots, onion and garlic, until softened, about 5 minutes.
Add ground beef, broth, cabbage, green beans, tomato paste, basil, oregano, and salt. Cover and simmer 20 minutes. Stir in zucchini and heat for 5 minutes. Serve.
