Ingredients:

    8 slices raisin bread
    200 g low-fat ricotta cheese (200g)
    12 slices papaya (or 12 slices cut in half), deseeded and peeled (approx. 1 large)
    1/2 cup sugar-free maple syrup

Directions:

    Toast the bread.

    To serve, top the toast with ricotta cheese and papaya slices. Drizzle maple syrup on top. Serve.

Variations:

    Other fruit breads and/or regular maple syrup may be substituted.
