10 1/2 oz firm tofu
1/2 tsp vanilla
1 Tbsp lemon juice
1 tsp lemon zest
2 Tbsp honey
Place all ingredients into a food processor or blender. Process until smooth.
Cover and store in refrigerator until ready to use.
Can use as a fruity topping, filling for cakes, or serve with fresh fruit.
