For a cool treat, enjoy this truly, low-fat ice cream.

Extra Time: 4 hrs 30 mins (for chilling and freezing)
1 egg white
1/2 tsp liquid sugar substitute
1 can (12 fl. oz) reduced-fat evaporated milk, chilled
1 1/2 tsp vanilla extract
Place all ingredients into a food processor or mixmaster and process until thick and fluffy. Pour mixture into a freezer-proof bowl and freeze until beginning to set around the edge.
Remove from freezer and beat until smooth. Return to freezer and freeze until firm.
