During the summer time I usually buy vegetables from my local market that I have never tried before. I really want to continue that tradition with winter vegetables/foods that are healthy and new to me and help me fight the winter food slump.
I started the year off with collard greens made with smoked turkey and black eyed pea salad. It was pretty tasty and I was able to keep my calories in check. Last night I made a vegetable pasta with broccoli rabe, carrots, onions and mushrooms reduced with a chicken broth.
Any good suggestions for winter veggies?
