  • 2 tsp light margarine or buttery spread
  • 2 thin slices multigrain bread (1 oz each)
  • 2 oz cucumber, sliced thinly
  • 1 oz slice low-fat cheese


Lightly spread bread with margarine. Place the cucumber slices and cheese on one slice of bread; top with remaining bread. Serve.


To serve at a tea party, remove bread crusts before preparation (light grain can be used). Slice the finished sandwich into 4's (sliced diagonally, into strips or circles).
