  • 4 cup whole-wheat flour
  • 1/3 cup wheat gluten
  • 1/4 cup honey
  • 1 tsp salt
  • 1 Tbsp butter
  • 2 tsp instant yeast
  • 1 1/2 cup - 2 cups water *

Preheat oven to 350ºF.

Place all ingredients into bread machine on dough cycle according to

manufacturer's directions. Alternately, mix all ingredients in a large stand mixer, or mix by hand.

When done (bread machine will beep), remove and split dough in half. Pat out each into a rectangular shape and hand roll into a firm log. Place each loaf seam side down into an 8x4-inch (or 9x5-inch) lightly-sprayed pans. Let rise until double in size.

Bake in preheated oven for 30 minutes.

* For the dough, start by adding 1-1/2 cups water, increasing up to 2 cups water, as needed (amount will depend on variables, e.g. humidity, elevation, flour texture).
