This low-carb dinner makes an easy week night meal.
Cut winter squash and zucchini into sticks. In separate containers/pans microwave or steam until just tender.
Melt butter in a saucepan. Add bacon and chicken. Stir over medium heat until bacon and chicken is cooked. Add tomatoes. Cook for 2 minutes.
Add lemongrass, zucchini and winter squash. Toss to combine, and serve immediately.
Serve with toasted herb bread, if desired.
