Irish Coffee and Irish Cream Cappuccino are traditionally made with an Irish Cream liqueur. Although tasty, the traditional coffee cocktail drinks are high in calories, fat and cholesterol.
This made-over recipe transforms the traditional beverages. By replacing the liqueur with a flavored coffee creamer and cocoa, replacing half & half with fat-free milk, and omitting the sugar and heavy whipping cream, it's lighter on calories but still full of flavor!
Whisk together cocoa, instant coffee and water in a large saucepan until smooth. Bring to boiling over medium heat, whisking constantly. Boil, whisking constantly, 2 minutes. Remove mixture from heat. Stir in Equal®. Cool slightly.
Whisk in milk and creamer. Refrigerate, covered, at least 4 hours or up to 2 days. Serve over ice cubes.
* If desired, 1/2 cup Equal® Spoonful can be replaced by either 12 packets Equal® sweetener or 1/2 cup sugar.
A small dollop of light whipped cream can be added as a topping.
