Yield: 4 x approx. 1/2 cup servings
Wash spinach but do not dry.
Cook damp spinach for 3 to 4 minutes or until reduced in bulk. Don't over cook. Drain and finely chop.
Heat oil in a heavy-based skillet and stir-fry prepared onion and bacon for 3 to 4 minutes or until onion is soft. Add cooked spinach, stir for 2 minutes more and serve immediately.
Wash spinach but do not dry. Cook damp spinach on HIGH for 5 minutes. Remove, drain and chop.
Cook onion and bacon with oil in a covered dish on HIGH for 3 minutes. Add spinach, cook on HIGH for 2 minutes more. Serve immediately.
If available, turkey bacon will further reduce calories and fat.
