A light, savory loaf.

1 small onion, finely chopped
2 cup low-fat cottage cheese
2 eggs, lightly beaten
1/2 tsp salt
1 cup dry breadcrumbs
Heat oil in skillet. Sauté onion until soft.
Place remaining ingredients in bowl, add onion and mix well.
Spoon mixture into a lightly greased loaf pan. Bake in preheated oven, for 50 to 55 minutes, or until browned and firm.
Or, serve cold with a salad. Also makes a nice sandwich filling.
