A delicious strawberry treat for the whole family!
6 oz strawberries
13 fl. oz freshly squeezed lemon juice (about 8 lemons)
8 Tbsp sugar substitute, or to taste
8 mint leaves for garnish
Whisk sugar into lemon juice. Place in a small saucepan and bring to the boil. Simmer for 2-3 minutes. Pour into a container and allow to cool.
Puree strawberries in a small food processor. Add lemon syrup and combine well. Taste and adjust sweetness if necessary.
Store in refrigerator. When required, treat the syrup as you would a cordial, diluting with soda water. Add ice and garnish with sliced lemon, strawberries and mint.
