Ingredients:

Irish Coffee and Irish Cream Cappuccino are traditionally made with an Irish Cream liqueur. Although tasty, the traditional coffee cocktail drinks are high in calories, fat and cholesterol.

This madeover recipe transforms the traditional beverages. By replacing the liqueur with a flavored coffee creamer and cocoa, replacing half & half with fat-free milk, and omitting the sugar and heavy whipping cream, it's lighter on calories but still full of flavor!

  Recipe Makeover

1/2 cup unsweetened cocoa

1/2 cup instant coffee granules

1 cup water

1/2 cup Equal® Spoonful *

6 cup fat-free milk

1/2 cup liquid Irish Cream coffee creamer (or flavor of choice)

3 cup ice cubes

  Traditional Recipe

2 oz Bailey's Irish Cream liqueur

5 oz coffee

2 tsp sugar

1 oz half & half

3 Tbsp whipped cream

1 dash of cinnamon

1/4 cup ice cubes

Directions:

Whisk together cocoa, instant coffee and water in a large saucepan until smooth. Bring to boiling over medium heat, whisking constantly. Boil, whisking constantly, 2 minutes. Remove mixture from heat. Stir in Equal®. Cool slightly.

Whisk in milk and creamer. Refrigerate, covered, at least 4 hours or up to 2 days. Serve over ice cubes.

Variations:

* If desired, 1/2 cup Equal® Spoonful can be replaced by either 12 packets Equal® sweetener or 1/2 cup sugar.

A small dollup of light whipped cream can be added as a topping.

Sugar and whipped cream are not included in the nutritional analysis and if used, the recipe may not be diabetic-friendly/low-carb, if diabetic-friendly/low-carb is desired.
