Ingredients Convert to Imperial

  • 1 package (4-3/4 oz.) regular vanilla pudding and pie filling mix
  • 2 cup light eggnog
  • 1 1/4 cup skim milk
  • 1 Tbsp light rum (or rum extract)
  • 1/8 tsp ground nutmeg
  • 1 prepared 9-inch pie crust, baked
  • 1/2 cup light whipped cream
  • 1/8 tsp nutmeg, extra (for garnish)

Directions:

Cook mix as directed on package (use pie filling directions), except use 2 cups eggnog and 1-1/4 cups milk. Stir in rum and nutmeg; pour into baked crust.

Cover surface with plastic wrap and chill several hours. Garnish with nutmeg. Serve each slice with a tablespoon of light whipped cream.

Variations:

For a richer tasting pie, replace skim milk with 2% reduced-fat milk.
