



For burgers with a difference, try these tasty vegetarian burgers.
1 cup low-fat ricotta cheese
1/4 cup all-purpose flour
2 eggs
2 cup chopped vegetables, cooked (such as mixed vegetables)
1 pinch freshly ground black pepper
1 Tbsp chopped chives
1/2 cup grated low-fat cheese
Beat ricotta, flour and eggs until smooth. Add cooked vegetables, black pepper, chives, and grated cheese.
Place tablespoons of burger mixture in a hot non-stick frying pan. Flatten slightly. Cook gently until browned, turning once.
Serve with crisp green salad in a crusty bread roll, if desired.
