[updated 7:01pm]
I found some amazing bread over the weekend. There is a chain of Arizona based healthfood stores called "Sprouts" (They have locations in AZ, CA and TX). I was hoping to find a new bread by Oroweat called Flax + 7 which has a lot of healthy fatty acids in it. Instead, I found a real gem!
Mahler's California Lifestyle Bread: Low carb, high protein!
I came across Mahler's California Lifestyle bread. The particular kind of bread that I bought was the cinnamon walnut flax & soy.
The typical bread has between 80 and 120 calories per slice, 1 to 3.5g of fat, 3 to 4g protein and 17 to 26g carbs. My preference is to go with whole grain breads with flax - like Oroweat Flax+3 or +7 (100cal, F1.5g , P5g, C17g) or Vogel's Soy & Flax Seed (100cal, F3g , P5g, C14g). Oroweat tastes better, but Vogel's is better for you. Still, now that I've found Mahler's I'm dropping them both.
Double the Protein and 1/3 the Carbs!
Mahler's has an amazing macronutrient profile. At 80 calories 3g fat 6g carbs (!) and 8g protein(!!), it has double the protein and 1/3 the carbs of my two preferred breads.
Flavor and Texture
My staple meal nearly every morning is a peanut butter and jelly sandwich made with Soy and Flax peanut butter, soy and flax bread, and "pure fruit" spread. (I like to start my day with EFA's

. The cinnamon and walnut flavor adds a lot to the flavor (soy & flax peanut butter tastes a bit odd by itself).
The texture of the bread is unusual. Those of you who have eaten healthy breads are probably used to a gritty nutty loaf that looks like someone put a bunch of seeds and twigs in a leather press. Mahler's is -nothing- like that. In fact, I was shocked to discover that the bread was 'squishy' and soft! It is a little odd to bite into, though. The bread doesn't break apart as easily as you might expect... but this really doesn't detract from the overall experience!
Mahler's Website
This appears to be the bread equivalent of a microbrewery. They're located in North San Diego (where I live), but they do have a website. Check out the California lifestyle line.

If you can find this bread near you, it is a definite "must have"

Update 7pm
Timing off today
Ugh - rotten food timing today, and for no really good reason. I had to produce a software analysis report today and once I got in the zone, I didn't want to stop. At 11am, I tried to get my morning snack... and didn't make it until 12pm. Lunch was around 2:30pm and I figured my snack for 5 or 5:30. Unfortunately, I walked out the door of my office without picking it up.
Big Dinner But Landed Safe
I rather unexpectedly made up for my snack calories at dinner when I had a double serving of arroz con pollo. The whole meal was 963 calories. So much for tapering calories (and carbs) at the end of the day!
Oh well, total calories were right on target and my ratios were better today. fat was down and carbs were up (though still not as high as they should be. 23 fat, 32 protein 45 carb. Optimal would be 20 fat 30 protein 50 carb.
I really really wish those brownies weren't so appealing.
