Last night we went to Olive Garden. I was going to order the Chicken Giardino, but they have this new dish. . . Venetian Apricot Chicken. There is no pasta in this dish. The dinner size came with 2 3 oz chicken breast (at least that was my guess) with an apricot glaze. There was apasagus with tomatoes and basil - yum! and broccoli. The salad came with the dressing on the side. If it weren't for those darn bread sticks, I would be able to say that I did very well, but I did have those soft, buttery, yummy bread sticks

.
Tonight, we are going over to some friends house. They are making salmon, corn, salad and some sort of fruit dessert. If I limit the number of glasses of wine, I should be ok with everything.
I'm still thinking of a plan for Las Vegas. 4 days of food. I need to keep busy doing stuff so that I do not eat at every buffet for every meal. I'm just not sure how to go about this. But I am going to bring my pedometer. That should encourage the walking.
When I get back from Las Vegas, I will be entering into the summer celebrations, 4th of July, my hubby's birthday, my daughter's birthday and in Utah, we have the 24th of July celebration.
Then comes August, my sister-in-laws birthday, camping trip, my birthday and my son's birthday.
The thing about celebrations is that we celebrate with food. But I'm going to try to focus on healthy foods for celebrations. Fresh vegetables, salads, and fruit. . . it is the season. And grilling fish or chicken (I'm going to try to avoid the red meat).
I'm not into cake, but I do like ice cream, brownies and cookies. Maybe I can find a good lowfat cold treat, like sorbet or something.
Well, time to get back to work.

Yes those breadsticks at the olive garden can be a temptation. I am dining at the olive garden next week so may try the venetian apricot chicken. Take care. Judy
