What a crazy week. Been pretty good with my meals until today
. Trainer says I have too much fat and should only eat natural foods, no spreads, or processed cheeses. He says to be careful with the dairy. Geez, I thought I was doing good to use lo-fat cheeses and those laughing cow wedges! Everyone has to have some cheese. Life is a drag without cheese! Heehee. Oatmeal Pancakes
Adapted and just tweaked a little from Good to the Grain
Makes about 18 pancakes
3/4 cup oat flour (you can make this by pulsing rolled oats into a food processor or spice grinder until finely ground; 1 cup of oats yielded 3/4 cup oat flour for me)
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoon baking powder
3/4 teaspoon Kosher or coarse salt
3 tablespoons unsalted butter, melted and cooled slightly (plus extra for the pan)

I promised myself to track my calories this weekend. Weekends are difficult for me, I lose my routine and totally let go of myself. Well, I did it. I tracked my weekend. Even though I was over, I feel good that I tried and good that I tracked.
This week is going to be busy. My trainer wants me to do 5 days a week at the gym. I think he wants me to mostly do cardio. I don't really understand the whole thing, but I am going to try that. I am also trying to eat my carbs during the day rather t...

Started my "Get Fit" challenge at the gym this week. My eating hasn't been good, though. The calories don't count when you hide in the bathroom and eat, do they?
Hmm.... I'm going to have to be real good because my trainer wants my food log. Uh Oh, I'm in trouble now. My motivation is nil. I say I want to do this, but everyday I find some reason to overeat. Been stressed because of the weather and bored at work. Both are big reasons for me to eat.

Gulp! I just put in my weight in and it said that I have gained 6.5 lbs in the last 3 months. Now down to only a 13 lb weight loss. This is not good. I told my husband I kept my weight loss off and only gained a couple of pounds. 6.5 is more than a couple. I guess I was fooling myself. I am determined to make this challenge at the gym work. I want to lose 30 lbs in 12 weeks, That is the goal at least. I am planning on putting more time in at the gym including longer workout sessions and more day...
