I slept last night, and it was goooooood. I decided to make it an off night as my body was pretty tired and i didn't sleep much on Wednesday night. My shin splints don't hurt that much today - just an occasional amount of pain, so I think I'm going to do c25k tonight or tomorrow.
I have my cooking class starting tomorrow. Kind of nervous about it, but It'll be okay. I just need to remember to take some band-aid's because I have an amazing ability to cut my hands.
The deconstructed sandwiches are working out pretty well for me. It allows me to have more vegetables with my lunch, and a bit more variety since it doesn't need to go on a bun anymore. I need to look into using some legumes instead with it vs the bread I'm eating now. The bread has artificial fiber in it, so at 100 calories for each roll, I'm not sure where the legumes will stack up. Thus, the research.
I actually weighed my chicken for my dinner after cooking it last night - usually I just estimate. Seems I'm under-reporting the amount I'm eating, which isn't a bad thing for this - it's just that that means I'm not getting as much protein as I think I am. So, I'm also going to look into turkey breast vs chicken breast and do some comparisons there. Apparently turkey breast has less fat than chicken breast, so I should be able to eat more and get more protein from it.
It's been good walking to work again this week, though. It's nice to have the time to just let my mind wander and contemplate the universe. Although I've been marking my walking as 3.5mph in the journal even though my actual speed is over 4 mph (I do 2 miles in 32 minutes, but that includes 2-3 minutes of stopping for lights at least). I wore a HRM when I did a walk around my park, and I found that my heart rate just wasn't getting high enough for the amount of calories that the ck site says i'm burning.
