I can't believe he brought home okra and asked if I would fry it up for tonights dinner. No matter how I tried to figure it into my days plan, it would not fit into days a lotted calories. So I said, " Honey, you're eating all tis okra by yourself and going to the store and buying me some potatoes " He got up and went to the store! I'm not going to cook up all that okra or not let him have it all either. He can take some for tomorrows lunch. Gee, the things we have to give up. It's the one fried food I actually like and. We don't eat fried foods but once in a blue moon around here to begin with. This is one of those things we eat fried. Does anyone know if deep frying is less calories than pan frying okra? We always deep fried so it would only take a minute or so after we put our corn meal on the okra. I know it's a Southern thing. I guess I'll my dietitian. Anyway, I'm not having any tonight, I'm having baby red potatoes and swiss chard.
My daughter and her brides maid decided on her wedding color finally. She let the bridesmaids choose the color and style of dress they wanted to wear. I think that's neat that she did that.
Today is a day of rest for concerning exercise. I will do stretches and some core stuff to loosen up my back but not anything more strenuous. I can't wait for tomorrows weigh in since it's been such a rotten week. It's not that I think that I have gained any. which I know I haven't. I wonder if it's possible to have lost any since I had so many low blood sugar episodes. These always cost me calories. Then there was one day I was really hunger and decided I was not going to punish myself. I went 200 cals over in order to satisfy my hunger. This is where the exercise plays the unknown factor I think and where I'm not too good at figuring out my exercise calories. We'll see.
All the scifi buffs...New season of Torchwood started Saturday on the BBC of America. It was good.(and I ate no snacks while watching

I'd just like to add my 2 cents - I've never been converted to an okra lover either, however, Boom, your idea sounds like a great way to lighten up a pan fried anything! Good idea!

Could you try spraying them in Pam and then dipping them in egg beaters egg whites and italian bread crumbs; then pop them in the oven around 400. I think this would be a great modified low cal version for you.

I was raised in the south and everyone thinks they have THE recipe that will convert me to an okra lover but it hasn't happened.
I don't know the cal difference between deep fried and pan fried. I do know that by getting the oil hot enough you keep it from soaking into the food.
What I like to do is spray a little bit of PAM into an iron skillet and then put very thinly sliced potatoes in. I turn the heat up high while I'm slicing the potatoes. Then I turn them down to medium-low for about 20 minutes. They come out nice and crunchy, on one side at least. In the last couple of minutes I'll throw some kale on the potatoes and cover with a lid. It steams the kale. You could do the same with swiss chard. Our grocer sells bags of prewashed kale which saves time during those busy days/weeks.
Maybe you could slice the okra very thin and try the same thing. Just a little of PAM should do the trick.

Hi lory!!!!thank you for all of your encouraging,kind and inspiring comments,I really appreciate it,and they have really helped me.The WW scale that I just bought is a digital and it is really nice.it measures your BMI,fat%,water content and bone density..I was happy to see that my bone density is high.I have just started the not weighing everyday,we will see how that goes. I thought about which day would be best to weigh and I am picking Wednesday.I first picked Monday but changed my mind because I do not want to weigh right after the weekend.I am very curious during the week and I spring on the scale as soon as I wake up..it is a ritual with me. I am not sure how I will break that. it is wise to try because your weight can fluctuate for so many different reasons.When is your daughter`s wedding?I also think it is neat that she allowed her wedding party to pick their own dress designs..most brides do not do that.I hope your weigh tomorrow is a GOOD one,if not,it is just as blip in this journey and tomorrow is another day.Enjoy the rest of your Sunday!!!.

Lory - I sent you a recipe for pan fried -- I would think you could fit this in somewhere - its not great for you but its not terrible either -- there are some nutritional benefits -- I had fried okra for the first time the other day at a restaurant (remember I'm originally from the northeast) -- and it wasn't bad....

When is your daughter getting married?
Great job choosing not to eat the okra, I have never tried it but anything deep fat fried w/cornmeal coating has to be good! Your red potatoes and Swiss chard sounds good too. I'm thinking good numbers for your weigh in tomorrow.
