So far this week I don't think that I have lost any weight due to some miss haps with my eating, but I have been pleasantly surprised to find out that I have lost some fat around certain parts of my body. I'll have to buy some new upper body garment soon as the current ones are getting too small. It is nice because now I'll not have to go to a specialty store since I will fit into a normal size! Now for the bad news, it's been a very long time since I have had a bad week dieting. It could be because I have not felt all that great this week, or because I've had the blues, but I've gone into the red three time this week. It will end, naturally. It will not continue, this I know. Maybe it was me taking a vacation, or my baby saying it needed one. I don't know. I've been struggling with low blood sugars and just said to myself I wanted to get them up even if that meant I was going to need to eat some extra food. I will need to go and make sure that I haven't over estimated on my carbs this week. then I'll have to make sure that I plan more carefully when I exercise so I won't have to eat extra food. Hopefully, I will have this all worked out by Monday and get back on track. I must look on another bright side, I didn't catch the flu from my hubby. So far it has passed me by. ( crossing my fingers that I'm one of the lucky ones)
A few blogs a go I talked about goals and couldn't come up with any. Well, I actually thought of one. I would like to be 25-30 pounds lighter for my daughter's wedding in August. Thirty would be asking a lot of this body, 2o-25 would be working real hard for a slow loser like me who tends to take weeks off. The next goal I have is one that I am just beginning to see that I may actually be possible. I have SI joint pain continually. It is a level 5-10 pain. I've been told no operations can help it but strengthening exercises. Lately, after years of trying, I'm finally beginning to see some possibility that this might be true. Maybe losing some weight has helped with the exercises I use to strengthen this joint. Maybe losing this weight has taken some pressure off of this nerve, or maybe it's just taken years for all the exercising to pay off. I have a hunch it has more to do with getting the weight off.
Today's recipe comes from the latest issue of " Diabetic Cooking " it's their version of classic mearloaf which my husband and I tried last night. It was yummy.
1 tsp olive oil
1 cup finely chopped onion
4 cloves garlic, minced ( hey I used the stuff out of the glass jar)
11/2 LP EXTRA lean ground beef ( I used Laura's )
3/4 cup old fashioned oats
2 large egg whites ( I used egg beaters )
1/2 tsp black pepper
1/4 tsp salt ( opt. )
1 tsp. dijon mustard ( I added Penzey's foxwoods spice seasoning)
1 cup chili sauce, divided
1. Preheat oven to 375
2.heat oil in a large non stick skillet over med. heat. Add onion; cook until soft, then add garlic and cook for another minute. Remove from heat and let cool 5 min.
3.Add beef, eggs, oats, seasoning, 1/2 chili sauce, onion mixture and mix.
4. pour into 9x5 sprayed loaf pan.
5. combine remaining chili sauce and mustard and pour over meat. Place into oven.
6. bake for 45-50 min. or until meat comes to temp of 160
Makes 6 servings Calories per slice=263;total fat= 7g.; sat. fat.=3g.=pro.=28.;carb.=18g.=chol.=70mg.;fb.=4g.;sod.=690

Diabetic Cooking is a great diet cook book even for those who are not diabetics. they even have recipes for those small slow cookers.

I may need to try that meatloaf...I have to be honest, I have to skip the swiss chard, since I CANNOT stomach spinach, under any circumstances! I think your goal is definitely attainable. And, if you don't make it all the way there, you'll still be lighter.

I am going to try that recipe soon. You know it is hard going through these challenges but I think knowing they are temporary and having the wisdom to handle them has made it easier this time. I don't beat myself up about them, I know I will recover. Glad you know that too.
What is SI joint pain? I have a type of arthritis that flares and then can go away for months but the doc hasn't given it a name. The healthier I eat the less flares I have, imagine that??? Have a great weekend.
