When the Lord created vegetables He knew what He was doing, but try telling that to the three year old who you just put broccoli in front of or telling that to someone who has been told to increase their vegetable intake three fold for their health. If you were to tell me that I would some day be sitting down to a lunch of carrots, red peppers, broccoli, cauliflower, and tomatoes, with a small portion of meat, I would have thought you were crazy. That was my lunch today. A chicken burger and the mentioned veggies. The surprising thing, I looked forward to every bite of vegetable that went into my mouth. I can't tell you when this change occurred. Six months ago, a year, eighteen months, or maybe as far back as two years ago, it just was such a gradual change in my taste and habits. Now, I actually crave vegetables at every meal, not the starchy kind, the real kind. Red, yellow, Orange, green, purple, lime green, please Lord, throw them all my way. ( except for Collard greens and hot peppers!) Ok, there are still a few even I don't care for, but I think by now you are getting where I am taking you. Our taste buds can change over time if we give them a chance. Try a veggie you never have or try cooking one in a different way. I started by combining certain veggies together in stir fries or by putting them in my grill wok. Today, I saw a " mesh frying " pan that you can get in the Williams an Sonoma catalog for $30.00 that does the same thing as my grill wok. Here's one of my favorite combinations: scallions ( both the green and white part ), snow peas, bean sprouts, red peppers, 1 tbs olive oil, Salt Grass Seasoning, Salt, Pepper. ( you can stir fry this instead of grilling these veggies )
Enough veggies talk, thanks for all the kind words yesterday since I bared my soul. I know everyone has had their life's moments that led up to their decision to start their diets, mine just took me forever to get there and stay there. Today at the pool I heard one lady say, " I can start a diet, I just can't stay on one because my mind is never into it. " She just spoke the Golden Words of everyones diet or should I say lifestyle change. If your mind and soul is not, or has not changed, it will be hard for you to stay on your program. The battle, I believe, with me, began there. So, for all of you who are still struggling with your minds about whether you really want to do this thing called a diet, my prayer is with you tonight. I pray that you will find peace in your heart that this will be the right thing for you to do. That you will see it is not that hard of a thing to do. Like eating vegetables, it will soon becomes something you will crave to do. With this thought I bid you good night.:cool:

I'm with ya on the collard greens, Lory but I LOVE veggies thank goodness! I've been married to hubby for almost 12 yrs. and could never get him to taste much more than a green bean. Then he got interested in culinary school. It taught him that if he at LEAST taste things, he might like it and over time, his taste buds have changed and he'll eat a helping of just about anything at least once. Yea, for Veggies!! :clap:

I have hated cabbage my whole life but about two years ago I was craving cabbage. :huh: So I bought a head of cabbage! I cooked some garlic and onion in a big deep pot and then threw in the chopped up cabbage--without water! That was the key. My mom used to boil cabbage and I hated the taste of it and especially the way the smell filled up the whole house. YUCK! But I steamed/stir fryed the cabbage with garlic and onion and I love it! Sometimes I make it a full meal by adding some ground beef or ground sausage into it. So good!

:hi: Lory, I feel this way about drinking water...if you drink it for enough time with out the bad drinks along with it, you will get to where your body craves it;) I am like you in that I like all veggies, some more than others..Cauliflower is not my fav, but if I were served it at some one's home, I would eat them. No reason for me to be fat:@. Hope you have a good night and a better tomorrow:kiss:
