I have one day left before my hand surgery and I am worn out trying to get everything done that I have to get done. chicken rolls

Here is a recipe for rolled up chicken with marinara or use your fav pasta sauce which is what I do. I made this dish and froze half of it in seal a meal bags for latter on. One half of the chicken I used regular cheese and the other I used a cheese substitute since I can't eat dairy. The recipe comes from an older copy of " Diabetic Cooking". Pre-Planning

Today I went shopping for the food I plan on making and freezing for the week I am resting up after my operation. I had to choose frozen meals that I could tolerate for my lunches since i will be one handed for 10 days. I settled on Kashi's frozen chicken entrees as well as some vegetarian meals from the health food section of the grocery store. I will try one Amy's pasta bowl. Unfortunately, I will have to eat some cheese products this week since so many frozen meals have dairy in them. I hope...

Get your sleep, you need 8-10 hours a day my mother would say. That's all I heard growing up as she would lecture me every time I would question why I had a bedtime when other kids did not. KEEPING STEADY

Yesterday I went to the hospital to get all the pre-op test done for my surgery. There I met a nurse who was taking down all my meds and other vital medical facts. She started to talk to me about my diabetes and my weight when I told her I had been losing and decreasing my insulin intake. Now this nurse was over weight herself and knew what I was doing was something special. She asked me if I wanted to know my BMI and I told her I pretty much knew where it was, but she could look it up anyway....
