Mrs W welcome back, how does it feel to join the land of the living ? That's what my pain management doctor said to me today as I gave him my report on how things were going. Although my SI-Joint pain was increasing some, I was beginning to feel some relief from the other procedures which we had recently done. I could now stand up a little more without the pain between my shoulders knocking me to the floor. This helps especially since I like to cook. Now I can cook without pain and help my husband clean up the mess more. Anyway, the doctor and I were pleased that I have come very far this year on his program for a patient with a degenerative condition. Unfortunately, when I told him I feel nerve pain after water aerobics and described the bouncing movements the class does, he said to just do my therapy water exercises where my back is expended in the water and has no gravitational force on it. Guess that means no WA class unless I go complete deep water and try doing the exercises with my water belt in the deep end. I wonder how that would go over ? I was given the OK to walk as much as I could. I will have to have one more nerve burn this year on my SI-joint, but the doctor was pleased with the fact that my last one was 14 months ago. This is twice as long as what they normally last. That means I have been tolerating the pain OK. I know losing my weight has played an important part in that as well as stretching out the area. Core stretching and strengthening is to be my next primary focus beside walking. Like Nadine, I am very weak here. I will have to strengthen this area using hand weights as I was told not to use the weight machines. For me, that would be an accident waiting to happen. Over all, I was pleased with my visit because I learned my limitations and made the doctor proud.
Today I tried fresh Papaya with a little lime juice and a sprinkle of splenda. It was delicious. Actually, I could have left out the Splenda and it would have been just as good. I bet Papaya fruit freezies would be good too. I made Pineapple ones yesterday and they were yummy. I put some cool whip on them and I was in heaven. The base formula for these were: 4 oz. pineapple/2 oz soy yogurt/1tsp real vanilla extract/ 2 tbs granular Splenda...put in blender...then small Glad freezer container. One larger Pineapple will make 8 freezies. A Papaya freezie use 5oz papaya and a squeeze of lime plus the yogurt and vanilla, and Splenda.
I found a product that's new to me, but probably not new to vegetarians or vegans. It's called, " Eggles Tofu Salad " by White Mountain. It actually taste like real egg salad. I can't have real eggs so this was a treat for me even though out of 120 calories for a 4 oz serving / 70 calories is fat. Here's the data:
Cals: 120/70 from fat, Fat = 7g, Sat. Fat = .5, Cho. = 0, Sod. = 430, Cb. = 0, Fb. = 0, Pro. = 14

You are getting so healthy!!!! Super impressed, I am! I'm also glad that you have less pain (besides the SI pain). Also, sounds like you have ap lan in place to decrease other pain...

I wish I knew how to make eggless egg salad. If you find a recipe, please share it. My local organic grocery store sells it in small containers and I love it on a Ryvita cracker (a cracker made with rye flour but no wheat flour) Glad to hear the nerve burning has helped your pain level.

Yum! That fruit freezie sounds great! I will have to try to make them! I am glad you can cook again, life is better when you can make your own food. Plus I think the boys in our lives like it when we cook for them.=D
