Have any vegetarians you have to feed ? Here are some mushroom burgers that I found in the local newspaper.
1 cup fresh basil leaves
1/4 cup walnuts
1/4 cup olive oil, plus additional for frying ( or grill and cut down on this added fat )
Kosher salt, to taste
1/2 white or yellow onion, diced
1 garlic clove, minced
3 green onions, chopped
1/2 tsp. cumin
1 cup chopped mushrooms
1 ( 15oz ) can pinto or red beans, drained
1 tsp. chopped parsley
2 eggs, beaten
1 red onion, cut into rings
4 - 6 hamburger buns

Place basil leaves and walnuts in food processor and pulse, adding oil oil, until they reach a smooth consistency. Season with salt ; set aside.
Saute' onion and garlic in 2 - 3 tsp. olive oil for three to five minutes, until onion is soft. Add green onions, cumin and mushrooms. Cook until mushrooms are browned; set aside and let cool.
Mash beans well with potato masher. Add the mushroom-onion mixture, parsley and eggs; season to taste with salt and pepper. Mix well. Form into 4 - 6 patties and fry in 1 - 2 tsp oil until crisp and browned. The patties will be fragile, so turn them only once, gently.
The recipe calls for cooking the red onion in oil and placing it on the burger. I choose not to do this because of the fat, but you can if you want. I'ld rather add mustard or raw onion at this point onto my bun. The recipe also calls for adding pesto which is loaded with fat. This would be yummy, but count your fat if you do this.

I signed up for another year here at CK. The last time I lost all of my weight, I did not learn to maintain it. If I do not lose this last 12 pounds, I at least need to learn how to maintain what I have lost. By staying on another year year, I feel I will learn this. After this year, I will buy the computer dairy for what ever new computer we plan on getting this year. ( probably a lap top. ) That way I will have a dairy with me at all times whether I am member of CK or not. I like keeping in touch with other people who are struggling with keeping their weight off like me. It makes me realize this battle is not mine alone. I have gained a lot of strength by reading you alls blogs and talking to you. Some of you have gotten me to do things I never would have thought I could have ever done, like exercise. Thanks. This year on CK I hope to lose 12 pounds and make exercise more a part of my daily life. Last year at this time when I signed up on CK My starting weight was 193. I had already lost half of my weight, but had a long way to go. During my first year here, I lost 45 more pounds and learned to exercise. This was something new to me. Up to this point I had just done water exercises three times a week. I never would have tried land exercises if it weren't for you all.
This transformation from water to land has led to great confidence in me. I feel like a new person now. For the first time in ten years I can walk the mall and do my own grocery shopping with out my husband's help. Yes, a lot of it has to do with getting the weight off, but a lot of it has to do with all of the exercising I am doing. OK, I have been faithfully going to Physically Therapy, but many of you have been encouraging me to keep going to that gym. Amy's running, Nadine's boot camp, Donna's home exercise program, and Jenn's walks, all of those things have motivated me to get out of my easy chair and go go go. Every time I go to the gym I hear your voices in my head. So, when you visit my blog and ask me what I did at the gym or you write about what you are doing exercise wise, it effects me greatly.
So, from the bottom of my heart, thanks to all of you for being there for me.

Hi Lory!! Thank you for your comments. You are probably the one person who understands this stuff the most, about lower carbs and insulin resistence and how frustrating it is. I hope you have an awesome Sunday, you deserve it girl!!

Hi Lory!!! I am doing pretty good with things thus far. I am counting carbs and I am eager to see how that works for me. I have a good routine at the gym and I have been feeling pretty good. It is weird how the more you go, the more you want to go. Have a great night!

I'm glad you signed up for another year. Your weight loss has been substantial. Your before and after pictures are amazing! Thanks for sharing the mushroom burgers recipe today. My youngest is a vegetarian, and I think she'd love it if I would prepare that dish for her. (I think I'd like it, too!) :hi:
