I tried this recipe out from Diabetic Cooking yesterday. I used red peppers instead of green and my husband and I really enjoyed the meal with Vigo's Mexican Rice an a salad. The meal freezes well and doesn't take much time to prepare. I used frozen corn that I set out to thaw for thirty min. because I like the crunchiness of white and yellow corn frozen over canned. I also used soy cheese on my half and regular cheese on my husband's half since I am dairy free. Mine came out good.
The recipe comes from the 2006 Jan./Feb. issue of Diabetic Cooking magazine
10 oz. 93 % extra lean ground beef ( my favorite is laura's lean )
1/2 cup chopped finely onions
1 can ( 4 oz. ) mild chopped green chilies
1/2 cup frozen corn kernels
1/2 of 8oz. can tomato sauce, divided use
1/4 cup cornmeal
1/2 tsp. ground cumin
1/2 tsp salt
2 large green bell peppers, split in half lengthwise, seeds and stems removed ( about 8 oz. each )
2 oz. shredded cheese, reduced-fat sharp cheddar ( 2/3 cup about )
1. Preheat oven to 375 degrees
2. Heat medium nonstick skillet over medium heat until hot. Cook beef until brown. Remove skillet from heat and drain meat on paper towels. Return meat to skillet. Add onions, chilies, corn, cornmeal, 1/4 cup tomato sauce, cumin, salt, and mix.
3. Arrange peppers, cut side up, in a 12x8 inch baking dish. Spoon equal amounts ( about 6 oz. ) into each pepper. Spoon remaining 1/4 cup sauce onto. Sprinkle with cheese. Bake 35 minutes. Cheese does not have to melt.

Hey, Hell is freezing over here.

It's snowing !!!!!!!!!! Ok, it won't stick and it won't hang around tomorrow, but there are these little white flurries coming down tonight. That makes twice I have seen snow in Houston since I have moved here ten years ago ! Dallas got snow about every three to four years, and ice ever other year or so. Down here it is, well when HEll freezes over. Now, I don't have a cold weather coat that is a real cold weather coat yet. JUst never got around to getting one since I lost all of my weight. So, I am putting on layers of clothing which is kind of easy since I still have some baggy clothes in my closet. This weather probably won't hang around too long. I hope. If it turns out to be a cold winter, I will have to break down and go get another warm coat and some sort of under garments. I also need some cold weather workout gear both for the gym and outside. I have a few outfits, but not many. I never know what temptature the gym is going to be when it gets cold outside. You think they would have it warm inside !

That recipe sounds good! I'll definitely have to try that. My family got snow in Baton Rouge. They posted some photos online that were just amazing to me. I don't remember much snow falling in the 30 years I lived in Louisiana. Treat yourself to a nice coat for Christmas. If you're looking for justification to spend money--just remember that our economy needs it.
