I tried this recipe out from Diabetic Cooking yesterday. I used red peppers instead of green and my husband and I really enjoyed the meal with Vigo's Mexican Rice an a salad. The meal freezes well and doesn't take much time to prepare. I used frozen corn that I set out to thaw for thirty min. because I like the crunchiness of white and yellow corn frozen over canned. I also used soy cheese on my half and regular cheese on my husband's half since I am dairy free. Mine came out good.Tuesday, December 9th 2008
I have looked at my chart and realized over all in the past six months I have maintained my weight around 150 for the past six months. Granted, I have been as low as 145 and am now 149. My goal weight is 135. I know I have yet to really go back and get on a consistent diet to lose these last pounds, but the good news is when I have put on a few pounds, I have been able to get those off immediately and get back down to my average. For those who read what happened over my Thanksgiving, all has turned out ok. My son and his friend have paid for some of the damage to my daughter's home. My son who's job is questionable will be helping out his friend pay off my daughter for the water damage to her computer and flooring due to getting drunk and letting the bath tube over flow the night he spent with them. I'm having to rest a tight knee this week so I don't know how much cardio I will get in. I can still get in my floor exercises which I will start right after I blog. Getting back into the groove is proving to be a little harder and more challenging than I anticipated. This just means I will have to do more planning than I am doing. My weight is down so I finally am getting to see where I really stand as far as the real weight gain from last weeks binging. I guess all that fiber cereal I ate had to get through my system. At first I thought I had gained ten pounds ! It sure felt like it ! The truth is I have only put on four pounds over this past few weeks which is a more realistic number.
