I've been back to developing recipes again. This weekend I made a vegetarian sloppy Joe recipe using the Morning Star Grillers and a Grilled pork with Mushroom Sauce using pork roast sliced into thin strip seasoned with Penzy's Russian Tsardust Memories Seasoning. I came to the conclusion that I had gotten bored with the food I had been eating on my diet and needed to develop new foods to add to my diet plan as well as try new recipes to get me back into my diet. This weekend I tried Joey's Vegetarian Chili and even took it to my church dinner. Everyone loved it and loved the fact it had no meat in it too. I took the basis of his recipe and developed a sloppy joe recipe which I think my church group will like. I made it last night and tried it out on my husband who liked it. Here is that recipe. It has a little too much sugar to be diabetic friendly, but I could eat it if I only put it on one slice of bread and watched the other carbs I ate with the rest of the meal. I do have a diabetic friendly sloppy joe recipe, but it is not as sweet and is very runny. This one will appeal to kids more and the average joe ( pardon the pun ) more. It only takes about 15 minutes to prepare and 15 minutes to cook so it is a very quick an easy meal to prepare. I found it freezes well in single serving sizes for latter uses. Marjorie, this may have too much sugar in it for you, but you could try and leave out the brown sugar substitute and but in agave syrup and see if that suits you better. In fact, for people who don't like artificial sweeteners you can substitute agave for this.


Lory's Vegetarian Sloppy Joes
1 can Muir Glen Tomato Paste
1 can Muir Glen Tomato Sauce
1 tbs Splenda brown sugar substitute
1 tbs Aji-Mirin sweet cooking wine *
1 tbs olive oil
1 medium red onion ( about 1 cup )
1 med red pepper ( about 4 oz. )
1 pkg Morningstar Grillers
1 tbs each ground Cumin, Chili pwd.,Smoked Paprika
1/4 tsp salt
* I changed the recipe from yesterday from Worcestershire sauce since this is not a vegetarian product. It will change the flavor some. If you are not a strict vegetarian, stay with the worcestershire sauce for a more original flavor.

Saute onions and peppers in olive oil ( best if done in non stick pan ). Mix together spices. Add tomato paste, sauce, and spices, and brown sugar sub. together and mix. Then add to cooked veggies. Stir. Then add grillers and cook for 15 - 20 minutes to incorporate flavors.

I will grant you this is not a meal I would feed myself everyday, but I would consider this a treat meal for a special occasion. Once in a while I have a craving for something junking like Sloppy Joes and wanted a healthier version of them. I felt this was. Sloppy Joes are known for being high in sugar and fat. At least I cut out the fat and Cholesterol and cut down on some of the sugar. I will know look at my daibetic friendly recipe and see what I can do with it to make it more appealing. I will let you know what my church groups thinks of this one. Let me know if any one tries this.

Speaking of vegetarian, my husband, actually said if I can come up with meals that taste like this he will eat more vegetarian meals. He is just not a great tofu fan and will not give up meat, but will eat meals that are vegetarian if I don't tell him till after he eats them and he likes them.=D

Yesterday I took off from exercise to rest. My nerves were screaming all the way down my legs and up into my back. I actually had to use my pain stimulator Saturday night. The weather change again, and it seems to bother my aching joints when it does. I also have learned that even when I ache I can still exercise though. Sometimes the exercise will take away the aching. I have to get up to the gym and work slower though and get through at least 20 minutes before I know whether I will be able to continue. It takes at least that long before my body is warmed up enough and it will tell me if it can actually exercise that day. The key is not focus on the pain for those 20 minutes because the muscles and nerves will hurt for those 20 minutes. They always have being a chronic pain patient. Then after the body releases the adrenaline from exercise, I don't seem to feel the pain anymore. This has been my experience. I once had a PT who told my of this phenomenom. So, I tested it and found it to be true. Has anyone else found this to be true as you exercised ? That you have a point in your running where your body says, ok, it's easy now, or in exercise your body says I can go another hour or two ?

I find it very true Lory. I think that is why I have been feeling the way I have mentally and physically. Your sloppy joes sound yummy. I think I need to start finding some new healthy recipies too, thanks for giving me the idea! I hope you are feeling better today.

The recipe sounds great! I definitely will try that one! I bet I could leave out the sugar and still enjoy it. A tablespoon of brown sugar left out shouldn't make too much difference. I don't usually experience pain when I exercise (Thank You, God) but I do know that once I start it's easier to keep going...but I think that's a matter of getting my booty going! ha!

The recipe sounds delicious Iory - thanks or posting it. About the pain..I had two herniated disks at one time and the pain was the worst I have ever experienced. It felt like a knife cutting across my lower back when I twisted or tried to stand up or sit down. I walked around and around my home as it was the only relief I had from the pain. It would take a good 10 minutes of walking before the pain would subside and I learned that if I could do that much, I'd be able to keep moving. Our bodies are amazing, aren't they? Thank heavens my back has healed and I just have to be careful now...but I always remember that pain and it keeps me cautious.

Thank you for finally explaining Sloppy Joes to me. They sound delicious. - I know the exercise feeling. It seems that the first 15 minutes is often a fight, and then, suddenly it feels like a switch is thrown. Also, the trainers of our running club told us that we can exercise with pain on two conditions: the pain does't get worse, and the pain isn't like stitches.
