My husband and I tried the Cooking Light recipe for mashed potatoes and found them to be wonderful. Here is the recipe.
3 pounds potatoes
1/2 cup fat free , less-sodium chicken broth
1/2 cup 2% reduced fat milk ( I used unsweetened soy milk )
3 tbs reduced fat sour cream ( I used Vegan sour cream since I am lactose free )
1 tsp. salt
1/2 pepper ( I left this out )

1. Place potatoes in sauce pan; and cover with water. Bring to a boil. Reduce heat;simmer for 15 minutes or until tender.
2. Drain and return to pan.. Add milk and broth to pan and mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly. Stir in sour cream, salt, and pepper. Yield 12 servings. 1/2 cup

I made this recipe differently because I use a food mill to make my mashed potatoes, I run them through my mill. I then warm up my liquids and pour half the liquids into the potatoes and stir before I put the rest of the liquid in. Often when using a food mill or a potato ricer you need less liquid. I then add liquid accordingly. I then added the sour cream which adds smoothness to the potatoes and silkiness. Like Miriam said to me in my blog yesterday, the key is that you must warm your liquids before you add them to your potatoes in this method in order to keep the gluten in the potatoes from forming a starchy build. My potatoes came out to around 98 calories per serving. Still a far cry from 250 calories of traditional mashed potatoes. Food mills are what the French use to make this delightful dish light and fluffy.:cool:
Today my neighbor saw me outside and asked me if I was going to take my walk. I mentioned it looked like rain, but I just might,latter on. She called me just as I got in the door saying she would like to join me if I was. So, I took my walk with my neighbor and dog and we had a delightful time. Yesterday at the gym I had another person who I casually know sit next to me while on the exercise bike and say, hey I see you in here all the time... we talked before. We talked our way through 20 minutes of biking before she left and I went on top my treadmill duties. Gee, it's fun to exercise when you have people to enjoy it with. Now, I do recognize that some serious training must be done alone when you can push yourself to your personal limit, but there are times when you are just plain exercising that it is fun to have someone to talk to. I have never had that before now. I now have some people to share this experience with and it is such a joy. Today it got me out when I really felt like staying in. Sunday when I wish I could have plopped myself in bed, it made me go to the gym and exercise because I knew my exercise partner would be waiting for me. I know most of us at one point or another need that encouragement to exercise. Exercise is becoming a part of my daily routine, but once in a while I still need to be pushed out the door because I still have a lazy streak in me once in a while. That's why I really do appreciate my exercise partners. Thanks to my new friend Merle who meets me on Sundays and to all of you for encouraging me to go out there an exercise.

That sounds like a lot more work then pouring potato flakes into boiling liquid :$ The good thing about exercise buddies is they keep you motivated to work out if you want to or not!!

I agree--exercise is so much more fun with a buddy. It helps get you moving and helps the time pass. I keep trying to get people to go to the gym with me at work but so far it hasn't happened :cross3: so I just read or listen to music while I walk.
