Yesterday we met with our lawyer and it wasn't too bad. We qualify for chapter 13 if we want to go that route. I learned the difference between using the debt settlement, management companies, going into chpt 13, and trying to negotiate with the credit card companies by yourself which we have tried a little already. We now have a meeting lined up with a man who teaches a Financial Peace University at our Church. Although I am inclined to go with legal protection under the court system for safety reasons. My husband finally realized just how many medical bills we really do have each month when he finally got down and put it together. I have been trying for years to get him to do just that. I would collect receipts and keep mentioning to him that this and that are medical and he wouldn't HEAR me. Now when faced with being told to have to come up with a legitimate accounting, he realized I was right. Oh brother, if you could have been in our kitchen last night to hear his apology. :$ That said, all is forgiven and now in the past, but now it all fits as to why we are in the mess we are in. The good news is that we are now on the raod to getting are lives back in order both money wise and health wise. I have dropped the weight and have gotten off a lot of drugs. My husband is now doing the same and hopes to get off a few drugs himself when all is said and done. ( Nadine remember biggest Loser and how this can be a result ) We both are talking to each other which is making a stronger marriage. I am thankful I started this diet because look what it has led us down. I know some couple actually break up when one person starts to lose weight, but my marriage has become stronger because I lost weight. My spouse saw my actions and has become a stronger person himself as a result. I think my kids too have realized that age means you are not set in your ways. Last week my daughter commented that she can see the growth in my spiritual and emotional person. This matters to me as I am sure it matters to you in your life. Have a good week end.
Here is my vegan Stroganoff Recipe in case you would like to try something quick an east this week end.

5-6 oz fresh mushrooms
1 cup chopped onion ( 1 small onion )
4 garlic cloves chopped ( or 2 tsp bottled garlic )
3 cups Imagine Creamy Portobello Mushroom Soup divided
3 tbs (Follow Your Heart) Vegan sour cream
1/4 cup corn starch
1 tbs olive oil
1-2 tbs chopped garlic chives or regular chives
1-3 tbs dried parsley or fresh if you have it
1 pkg Morning star Meal Starters

Chop up onion and mushrooms. Saute in oil until tender. In another container take the cornstarch and pour 2 cups of the soup into the cornstarch stirring it to slowly mix the starch into the soup. Make sure you don't pout the starch into the soup but it's the other way around or you will have trouble getting the starch to blend into the liquid. Then pour this mixture into the onion and mushrooms slowly stirring to make sure every thing is mixed up. Add the grillers and cook for about ten to fifteen minutes As this mixture cooks you will need to add the last cup of mushroom soup and stir. The dish should be done in about a total of 15 minutes. Add the chives, parsley, sour cream when the mixture is done.
makes 5-6 1 cup servings around 195 cal per serving
You can substitute meat or tofu in place of the meal starter and use low fat sour cream. This recipe as is, is Dairy free since the Cream of Mushroom soup is made with Soymilk and vegetables by Imagine Food Company and can be found in your Natural Food section of your grocer.
MY husband and I are trying to eat one vegetarian meal a week or more now for health reasons. Thanks to all you vegetarians for helping us out and opening our eyes to the world of new foods out there.

I think this just shows how strong of a person you are. A lot of people would use this as an excuse and say to heck with it. I have a lot of respect for both of you. I wish you the best in which ever route you decide.

Isn't it odd how the harder times can make us closer to the ones we love? I'm glad it's going that direction for you and not the opposite! By losing weight and being able to stop or reduce a lot of your medicines you're in such a better place financially and health-wise. Your good decisions in the past year or two are helping you out today. Isn't that a great feeling?

Dave Ramsey and Financial Peace University will make such a difference in your heart. Both of my (married) children have gone through the course and they are living debt free now. I still use a credit card but generally have it paid off about the same day or so that it posts.

Hopefully you can get through this without going Chapter 13 or the others.

hi lory! thanks so much for letting me know about your recipe! this is the tastiest-looking vegan stroganoff recipe I've seen (and it IS vegan! ) . I'm excited to try it; I've been looking for a good one ! My husband and I both love grillers crumbles. They are delicious and so easy to use ! another meat substitute that is really quality, i don't know if you've ever tried it, but if you are looking to make more meat substitutions, is gimme lean! sausage style . you slice it into patties and it makes a great breakfast, or you can make "meatballs" out of it ... it's very versatile and tasty! how i got my nickname: i always had a shoe and bag habit (I didn't really shop at neiman marcus, but my friends used to tease me for my fancy tastes.) when I decided to go to graduate school to study political theory a friend scoffed that I'd never be able to stick to it wth my fancy tastes. he laughed, "neiman marxist!" and a nickname was born :) congratulations on your excellent progress and all you've discovered in your weight loss journey. you are an inspiration to your family and those here at CK!
