I saw this recipe that can be cooked in a crock pot. I will cook it in my oven, but it came from The Healthy Slow Cooker by Judith Finlayson. I realize a lot of people for health reason eat fish so like me are looking for more fish recipes. Also this being Lent many people eat more fish dinners during this time. I thought I would share this recipe then. Besides, I am always looking for an idea on what to do with canned Salmon. I have made Salmon croquets ( ? ), creamed salmon on noodles, a salmon casserole, and salad out of canned salmon. Let me know what you have made from canned salmon.
Salmon Loaf
1 tbs olive oil
1 large onion, finely chopped ( about 1 1/2 cups )
4 stalks celery ( about 1 1/2 cups )
8 oz mushrooms, thinly sliced
1/2 tsp dried tarragon
1/2 tsp freshly ground pepper
2 tbs freshly squeezed lemon juice
3 eggs ( i use egg beaters or egg whites myself )
2 cans ( 7 1/2 oz or 1 15 oz ) wild salmon, including bones and juice, skin removed if desired
1/2 cup finely chopped parsley
3/4 cup dry bread crumbs
warm tomato sauce. or can use chili sauce or another tomato based relish sauce. Or you can use a yogurt-based sauce such as tzatziki.

1. warm skillet, heat oil over medium heat for 30 seconds. Add onion, celery, and mushrooms and cook, stirring until celery is tender, about five minutes. Add Tarragon and pepper and cook, stirring, for one minute. Remove from heat and set aside.
2. In a large bowl beat in eggs and lemon juice. Add salmon with bones and break into small pieces. Add vegetable mixture, parsley, and bread crumbs, and mix until well blended. If mixture seems too wet add some more bread crumbs 1 tsp at a time.
From here you can decide to cook in oven or crock pot. I cook mine in an 8 x 9 loaf pan at 350. Or follow the rest of these direction for cooking in the crock pot.

3. Fold a 2 foot piece of foil ( or if you have a large oval crock pot you can use a 8 by 4 inch loaf pan ) in half length wise. Place on bottom and up sides of slow cooker stoneware. Shape salmon mixture into a loaf and place in middle of foil strip on bottom of slow cooker stoneware.

4 cover and cook on low for 4 hours or on high for 2 hours or until loaf is set. Slide the loaf off the foil. Top with the tomato sauce.

Note: This recipe Calls for bread crumbs, but I thought about using Panko a Japanese bread crumb instead. I also will use egg beaters instead of eggs which will effect the cholesterol count and fat count.
I will see if the Panko makes any difference. I have whole wheat panko and bread crumbs so if it looks like the panko won't work, I can change to the bread crumbs.

Going on a financial diet is much like a food diet. I am still going through with drawal aches and pains. I used to without thinking about it just go and buy a cup of coffee whenever I wanted one when I was out about town. Now I have this deal with my husband that I will not buy coffee except once a week. I have a thermos and have to make my own when out about. I have always been good about taking my snacks and lunch with me when ever I went shopping when I I was out and about, but now even buying that cup of Joe is out. Talk about giving up a habit !!!!::angry1::::cross1: I also used to go the grocery store to just get out of the house. Seriously. I love the people, the atmosphere, the products to look at and learn about, the differences in stores, how each store is different. My husband thinks it is strange how I know different stores and what is the specialty of each store. NOw, I am having to force myself to stay out of them because I am too tempted to spend in them. This is good for my diet too. I would see something I wanted to try and come home with something that was unplanned. Over these past two years I have gotten better about only buying healthy food now, but I still find myself wanted to try new " healthy foods " at the cost of my family budget. This is where the diet is similar to the financial diet. I have to learn the same control that worked on my food diet and apply it to my financial diet. I'm learning the same Beck solution techniques work on both. I also found out my root cause for both problems is pretty much the sssssame probbbbblem just manifesting it's ugly head in another are. For this reason I realize now that staying on my diet is a very good thing. I need to keep learning self control in all areas of my life. Self discipline comes with practice. Here at this CK sight I am help accountable by you all as well as gain the discipline through logging and blogging. This discipline then transfer into other areas in my life like how to control my finances and my relationships with others. I don't know about you, but I am getting my moneys worth here because of the personal growth that has taken place within me because I belong to this sight. I ask everyone who reads this blog today to ask yourself, are you a better person for having joined this sight than you were before you joined ? Perhaps being a member of another sight might have done the same for you, perhaps not, but for me the way it is laid out around has allowed me to grow. So, in closing, I want to thank all of you who have come and participated in my blog, thanks for being apart of my journey and helping me to grow.

yeah rest is what I need but with the half days away I have to figure out whats causing it and change it FAST.

I definitely feel like being on CK has helped me grow and feel more confident in myself. We've been trying to cut back on our expenses so I've been avoiding Target for the same reason you avoid the grocery--I'll find something that I wasn't planning to buy and never seem to get out the door without spending less than $100!

I used to do the same thing at Target, luckily (or maybe not) they closed it down a year ago and I can really tell a difference. I would go buy something to wear just because I didn't want to do laundry and like you said, get out of the house....I miss that Target :cry4:
